Your beef is custom processed, and any cut can be converted into ground beef if you prefer.
What Comes with a Half Beef?
A typical half beef has a hanging weight of 300–450 pounds. The exact number of packages and cut sizes will vary depending on the size of the animal and your custom cutting instructions.
Premium Steaks
(Standard cut: approximately ¾-inch thick, 2 steaks per package)
- 10–12 T-Bone Steaks
- 12–16 Ribeye Steaks
- 6–8 Sirloin Steaks
- 8–10 Round Steaks (tenderized on half and quarter shares)
- 2 Flank Steaks
Hearty Roasts
(Approximately 3–4 lbs each)
- 6–8 Chuck Roasts
- 3–4 Shoulder Roasts
- 3 Sirloin Tip Roasts
- 2 Eye of Round Roasts
- 1 Rump Roast
Ground Beef
Approximately 70 pounds of premium ground beef, conveniently packaged in 1.5-pound packages.
(If you’d like more hamburger, nearly any steak or roast can be processed into additional ground beef.)
Additional Cuts
- 8 packages of Stew Meat (½ lb each)
- 3 packages of Short Ribs
- 5 packages of Soup Bones

$11.00 per pound of hanging weight
This price applies to quarter, half, and whole beef shares delivered from Homer and Anchorage to Fairbanks and surrounding communities.
Understanding Beef Shares
A hanging weight is the weight of the beef carcass after harvest, once the hide, head, feet, and internal organs have been removed. Hanging weight is the industry standard used when pricing beef shares.
Your final take-home meat is typically about 60% (±) of the hanging weight after aging, trimming, deboning, and processing.
For example:
- Quarter Share: Approximately half the cuts listed above.
- Half Share: The quantities shown above.
- Whole Share: Approximately double the cuts listed above.
Because every animal is unique, the exact number of packages and individual cuts may vary slightly.
