How to use: New York, Kansas City, Delmonico’s or Strip Steak, this tender and beautiful cut comes from the loin area of the backbone and will be a great steak dinner, no matter what you call it! Cook to 145 degrees for Medium Rare (11-15 minutes over medium heat) and 160 degrees for Medium doneness.
