This cut makes a memorable meal when roasted after an overnight marinade in rosemary, garlic and thyme added to olive oil and balsamic vinegar or white wine. After 30 minutes at 425 degrees for browning, allow another hour or more at 350 degrees for 5 lbs of medium rare deliciousness.
